Spicy Korean Tacos These tacos combine the bold flavors of Korean cuisine with the classic Mexican taco format. They feature marinated bulgogi beef, topped with a zesty slaw and a drizzle of sriracha mayo, all nestled in soft tortillas.
Spicy Korean Tacos
Ingredients:
- For the Bulgogi Beef:
- 500g thinly sliced beef (sirloin or ribeye)
- 3 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp sesame oil
- 3 cloves of garlic, minced
- 1 inch ginger, minced
- 1 pear, grated (for tenderness)
- 2 green onions, chopped
- 1 tsp black pepper
- For the Slaw:
- 2 cups cabbage, thinly sliced
- 1 carrot, julienned
- 1/2 cucumber, julienned
- 2 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp sugar
- Salt to taste
- For the Sriracha Mayo:
- 1/4 cup mayonnaise
- 1 tbsp sriracha (adjust to taste)
- Additional:
- Small tortillas
- Sesame seeds and chopped green onions for garnish
Instructions:
- Marinate the Beef:
- Combine soy sauce, brown sugar, sesame oil, garlic, ginger, grated pear, green onions, and black pepper in a bowl.
- Add the beef and marinate for at least 30 minutes, preferably longer for deeper flavor.
- Prepare the Slaw:
- Toss cabbage, carrot, cucumber, rice vinegar, sesame oil, sugar, and salt. Let it sit to pickle slightly while you cook the beef.
- Cook the Beef:
- Heat a pan over medium-high heat. Cook the beef in batches until nicely seared.
- Make the Sriracha Mayo:
- Mix mayonnaise and sriracha in a bowl.
- Assemble the Tacos:
- Warm the tortillas. On each tortilla, lay a portion of beef, top with the slaw, and drizzle with sriracha mayo.
- Garnish with sesame seeds and green onions.
